Bloody Good Burgers
1 lb ground sirloin (or ground beef)
1 Tbs Worcestershire sauce
2 Tbs Jimmy Luv's Bloody Mary Mix
1 egg yolk
2 Tbs unsalted butter, melted
2 Tbs unsalted butter, softened
1 tsp garlic pepper
4 quality hamburger buns
In a small bowl, combine and stir the melted butter, Worcestershire sauce, Bloody Mary Mix, and egg yolk.
In a large bowl, mix the liquid into the meat briefly with your hands. Avoid over-handling the meat, as this can ruin the consistency.
Form into 4 large patties, somewhat larger than the buns are. My technique is to lay the beef onto a sheet of wax paper at a uniform thickness. Then, using a bowl of the “right” size, press into beef and peel away the outside edges. This makes for a nice round patty
Before grilling, press fingertips into the center of the patty so that the edge is thicker than the center. That way, when it “puffs up” during cooking, you get a uniform thickness.
Use the remaining 2 Tbs of butter on the top half of the buns. Grill the patties for 5-6 minutes on each side, sprinkling with garlic pepper (to taste), then grill the buns till toasty.
Serve with your choice of toppings.
