Jambalaya with Luv
2 cooked chicken breast - chunked
1/2 pkg of Cajun or smoked sausage - sliced
2 ribs celery (chopped)
3 cloves garlic
1/2 yellow or orange bell pepper
2 cups Jimmy Luv's Original Bloody Mary Mix
2 cups chicken broth
1 1/2 cup rice
1 tsp basil
1 tsp thyme
2 Tbl parsley
Boil chicken in water, season with s/p to yield 2 cups of broth.
Set aside. Saute vegetables in oil or butter until wilted slightly.
To rice add Jimmy Luv, reserved broth, sauteed vegetables, meat, and seasonings. Cook covered on low heat just until liquid is absorbed. Turn off heat and allow all liquid to absorb.
Note: Can add or substitute seafood and more or less meat. This is an easy weekday meal, a great way to use leftovers, and fun dish for entertaining.
