Bell Peppers Luv

8 medium bell peppers (any color)
1 lb lean ground beef
1 cup minute rice (cooked)
1/2 cup minced onions
1 can (14-1/2 ounces) diced tomatoes and green chilies, undrained
1 cup of Jimmy Luv’s® Bloody Mary Mix
3/4 cup shredded cheddar cheese (3 oz)

In a skillet over medium heat, cook the beef until evenly browned.

In a bowl, mix the browned beef, cooked rice, onions and Bloody Mary Mix. Spoon an equal amount of the mixture into each hollowed pepper. Place them in a slow cooker to cook all day or in a pan and bake in the oven for approximately one hour at 350º. Sprinkle with cheese.
